Recipe for Vegan Stuffed French Toast
This vegan stuffed french toast is a very tasty vegan breakfast or brunch idea that you can make in 10 minutes with just a few ingredients.
All you need is bread, berries, maple syrup, vanilla extract, non-dairy milk, cornstarch, sugar, cinnamon, vegan butter or oil for frying, and vegan cream cheese!
You can also top your vegan french toast with any fruit of choice, syrup, powdered sugar, etc.

This vegan stuffed french toast can be gluten-free using gluten-free bread.
How To Make Stuffed French Toast (Vegan)
1. If you have store-bought vegan cream cheese skip to the next step. If you want to make quick homemade vegan cream cheese in 2 mins, click here for my recipe.
2. If you have your vegan cream cheese, let’s prepare the “stuffed” part of your french toast. In a small bowl, mix together vegan cream cheese, blueberries (or berries of choice), maple syrup, and vanilla extract.
3. In a wide shallow bowl, whisk together non-dairy milk (unsweetened), cornstarch, sugar, salt, ground cinnamon, and vanilla extract until mixed well. This is your liquid mixture for coating your french toast.
4. Heat vegan butter or oil on a non-stick pan on medium-high heat.
5. Take your vegan cream cheese stuffing, and spread it onto one slice of bread, then close it with the other slice, creating a sandwich.
6. Dip your sandwich into the liquid mixture until well-coated on all sides. Start by putting one side down to absorb the liquid and then flip carefully until it’s coated and ready to be fried.
7. Carefully place the dipped sandwich onto the heated pan and cook on each side for around 3-5 minutes on medium-high heat until nicely golden brown on each side or however you like your french toast.
8. Lastly, top your vegan stuffed french toast with any additional fruit, maple syrup, and/or powdered sugar, and enjoy right away.

- 1/4 cup Vegan cream cheese store-bought or you can make my homemade recipe in 2 mins using a blender
- 1/3 cup Blueberries Fresh or frozen, you can also try using different berries
- 1 tsp Maple Syrup
- 1/2 tsp Vanilla Extract
- 1/3 cup Non-dairy milk unsweetened
- 2 tbsp Cornstarch
