Recipe for Vegan Spinach Pasta
I made this vegan spinach pasta recipe super easy & quick for you to make in 12 mins so you don’t have to spend an hour in the kitchen.
I used baby spinach, but you can use any spinach you’d like for your pasta. To make a creamy pasta sauce, we’re going to use hummus! You can use store-bought hummus or make my homemade hummus (oil-free). If you’ve never tried hummus as a pasta sauce, you have been missing out.
It’s amazing and the hummus not only adds additional protein to this meal but makes a delicious, creamy and rich sauce.
This recipe is a high-protein vegan pasta, packed full of spinach and a creamy sauce, yet feels like comfort food! With the addition of the chickpeas, we’ve got ourselves some extra protein which will keep us full for longer and make this meal extra satisfying.
Feel free to add in more spinach and/or other vegetables as desired!
The recipe is vegan, soy-free, nut-free and can be made gluten-free using GF pasta & oil-free if you use my oil-free hummus recipe!
Ingredients for Creamy Spinach Pasta (Vegan)
- Pasta of choice (use gluten-free if desired)
- Spinach
- Onion
- Garlic
- Chickpeas or other beans
- Oil or Vegetable broth
- Hummus
- Nutritional Yeast (optional)
- Lemon juice
How To Make Vegan Spinach Pasta
1. Start by boiling a large pot of water and follow the instructions on the package to cook 4 servings of pasta (al dente). At the same time, prepare the spinach by rinsing them, cutting the onions thinly and mincing the garlic to your liking.
2. Next, drain and rinse a can of chickpeas and leave to the side.
3. While cooking the pasta, separately heat up a large non-stick pan or wok with oil, and add in the onions and garlic to saute for a couple of minutes. You can also add any other vegetables like mushrooms or peppers based on your preference or what you have available at home.
4. Add in the spinach and mix together to wilt and then add in hummus and nutritional yeast (optional). This will create the mixture of the pasta sauce.
5. Strain the pasta and save around ½ cup of the pasta water. Add in the pasta to the pan along with a small splash of pasta water and mix everything together. Add more pasta water as needed and cook for a couple more minutes.
6. Turn the heat down, and mix in the can of chickpeas and lemon juice. Add salt and pepper to taste. And enjoy your vegan spinach pasta!
