It’s very rare that I will have salad as a main meal. In fact, it’s rare that I have salad at all! Don’t get me wrong, I love vegetables and I do like to eat salad – but I almost always see salad as a side dish rather than a main meal. Don’t tell me I’m the only one…
So, it isn’t surprising that I don’t think I’ve ever done an actual salad recipe on my channel – I may have done pasta salad but probably not an actual green salad recipe. I tend to find salads rather boring and I don’t want to be the stereotypical vegan who eats lettuce all day!
That being said, I came back from my two week trip to London 5 pounds heavier and I decided I need to seriously make some changes. Not that I eat super unhealthy regularly, but I want to make sure I get in tons of nutrients as fast as possible. So I decided to eat more greens and what better way to eat more greens than to make some bad ass salads?
These are super delicious and in my opinion, not at all boring. The secret is in the DRESSING! You don’t have to have super fatty, artery clogging dressings to make your salads taste good. Give these a go and you might be having salad every day from now on and enjoying it too! *gasp*

“Creamy Tahini Goodness” Salad Dressing
Creamy Tahini Dressing Ingredients (4-6 servings):
- 1/2 cup water
- 1/4 cup nutritional yeast (more if preferred)
- 1 tbsp garlic powder
- 1-2 tbsp soy sauce or tamari
- 2 tbsp dijon mustard
- 1/3 cup tahini
- 1-2 tbsp apple cider vinegar (optional)
- 1 tbsp maple syrup or other sweetener (optional)
“Spicy Korean Goodness” Salad Dressing
Spicy Korean Salad Dressing Ingredients(2-3 servings):
- 2 tbsp gochujang (Korean red pepper paste)
- 1 tbsp maple syrup or other sweetener
- 2 tbsp rice vinegar or apple cider vinegar
- 1/2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp garlic powder (or 1 clove fresh minced garlic)
- 1-2 tbsp toasted sesame seeds (optional)
