This vegan ricotta toast is nut-free, oil-free, higher in protein, and fast to make! My vegan ricotta cheese can be made in 2 mins using a food processor (preferred) or high-speed blender to make it creamy and smooth.

If you have leftovers from your toast, you can also use the vegan ricotta for wraps, sandwiches, vegan lasagna, or any other recipe where ricotta cheese is used.

This is one of my favorite recipes that I make over and over again. I can’t count how many times I’ve made this.

Vegan Ricotta Toast Ingredients

  • Bread
  • Vegan Ricotta Cheese
    • Tofu (extra firm) 
    • Lemon juice
    • Salt
    • Garlic Powder
    • Dry Basil
    • Nutritional Yeast (for cheesy taste!)
  • Toppings
    • Roasted red bell peppers from a jar
    • Cherry Tomatoes
    • Olives
    • Parsley
    • Basil
    • Salt & Pepper

This vegan ricotta toast can be gluten-free using gluten-free bread.


How To Make Ricotta Toast (Vegan)

1. If you have store-bought vegan ricotta, toast your bread slices. Spread your vegan ricotta cheese on each slice. Top with your favorite toppings. I love sliced roasted red bell peppers (from a jar), cherry tomatoes, and parsley on my ricotta toast. You can also add olives, basil, and much more!

2. If you want to make vegan ricotta from scratch, start by breaking up the tofu into smaller chunks and add all the ricotta ingredients into a food processor (preferred) or a high-speed blender. Blend everything until smooth and thick. This might take a minute or so and you may have to scrape down the sides once or twice. That’s it! Spread your vegan ricotta cheese on each slice. Top with your favorite toppings. I love sliced roasted red bell peppers (from a jar), cherry tomatoes, and parsley on my ricotta toast.

If you have extra vegan ricotta cheese, store it in a tightly sealed container in the fridge for up to 3-4 days, or use it in a vegan lasagna, wraps, or many other recipes where ricotta cheese is added.

Ingredients

  • 4 slices Bread for toast
  • 2-4 tbsp Vegan ricotta cheese store-bought or make homemade using ingredients below
  • 2 roasted red bell peppers from jar, sliced
  • 6 cherry tomatoes sliced in half
  • olives optional for topping
  • Parsley or Basil optional topping

Vegan ricotta

  • 1 block Tofu Extra Firm Tofu
  • 3 tbsp Lemon Juice or 1 whole lemon juiced
  • 1/2 tsp Salt
  • 1 tbsp Garlic Powder
  • 1 tbsp Basil dry
  • 1/4 cup Nutritional Yeast

Instructions

  • For homemade vegan ricotta cheese instructions, skip this step. If you have store-bought vegan ricotta, toast your bread slices. Spread your vegan ricotta cheese on each slice. Top with your favourite toppings. I love sliced roasted red bell peppers (from a jar), cherry tomatoes, and parsley on my ricotta toast.
  • Start by breaking up the tofu into smaller chunks and then add all vegan ricotta ingredients into a food processor (preferred) or a high speed blender.

Notes

For a single serving, just make 1-2 pieces of toast and you can seal your vegan ricotta cheese in the fridge for 3-4 days and use it for following breakfast, lunch, or dinner.
