I don’t know about y’all but I’m always trying to think of new vegan hacks and ideas to make my life EASIER. Not only because it’s my job but it’s so much fun to find easier ways of doing things… If you can make something in less than 5 minutes instead of 20, WHY NOT?!
I had to bring you guys another vegan hacks video and this time, I am using my beautiful friend, THE MICROWAVE. I know a lot of people have problems with microwaves and don’t like using them so I apologize if this pertains to you. I personally don’t really believe in the whole “microwaves kill all the nutrients” theory and if loving microwaves is wrong, then I don’t want to be right! Microwaves make my life a thousand times easier and I just think if I didn’t use one… it’d be a disgrace to my lazy self.
So for those of us that aren’t afraid of the microwave, HERE ARE SOME VEGAN MICROWAVE HACKS… or three super easy recipes you can make in a microwave! These are perfect for those of you that may live in a dorm and don’t have access to a full kitchen. Many of us might just have access to a microwave and very simple kitchen tools. Or maybe you just want some easy ways to make food without having to wash a million dishes… Let’s be real – none of us like to wash pots and pans!

Microwave Red Curry Rice Noodles (Vegan, Gluten-free)
Ingredients (1 serving):
- 1/2 tbsp Thai red curry paste (check ingredients to see if vegan)
- 1/2 cup regular or light coconut milk
- 1 serving rice vermicelli noodles (I used very thin ones)
- 1-2 tbsp chopped onion (optional)
- Handful frozen edamame beans (or other frozen vegetables of choice)
- 1-3 tbsp water
Instructions:
- Add red curry paste and coconut milk into a microwave safe bowl and mix until the curry paste has thinned out a bit and mixed in with the coconut milk. Doesn’t have to be perfect!
- Add in the noodles, onion, edamame beans (or other veggies of choice) and mix well until noodles have been somewhat coated with the coconut milk/curry mixture.
- Add a few tbsp of water to wet the noodles so they cook nicely in the microwave.
- Cover the bowl with a microwave friendly plate/cover and microwave on high for about 3 minutes or until noodles are cooked, mixing halfway through.
- Enjoy straight out of the bowl!
Lazy Man’s Corn Chowder (Vegan + Gluten-free)
Ingredients (1 serving):
- 1/2 cup water + 1/2 cup non-dairy milk (I used almond but I think coconut milk would go great with this)
- 2 tsp corn starch
- 1 tsp vegetable broth powder
- 2-3 tbsp diced onion
- 1 cup frozen corn
- 1/2 cup frozen (ready-to-eat) butternut squash or other frozen vegetables
Instructions:
- Add all ingredients into a microwave friendly bowl.
- Cover and microwave on high for about 3 minutes.
- Enjoy!!! I topped mine with some sriracha 🙂
Coconut Mug Cake (Vegan)
Ingredients (1 serving):
- 4 tbsp store-bought vanilla cake mix (make sure to check if vegan)
- 3 tbsp coconut milk
- 1/2 to 1 tbsp water
- Glaze:
- around 1 tbsp coconut milk
- 1/2 tbsp powdered sugar
- Coconut flakes for garnish (optional)
Instructions:
- Mix together cake mix, coconut milk and water in a microwave-safe mug. Make sure it’s well-combined.
- Cover and microwave on high for about 2 minutes.
- Meanwhile, mix the ingredients for the glaze together.
- Take the mug cake out of the microwave and you can just pour the glaze on top and eat it out of the mug or you can take the mug cake out and plate it. Then sprinkle some coconut flakes on top (optional).
- Enjoy!!!
