Easy vegan kimchi fried rice recipe! Fish-free kimchi and rice is stir fried with extra firm tofu, vegetables, and seasoning! Super tasty Korean dish!
Kimchi fried rice (Kimchi Bokkeumbap, 김치 볶음밥) is a type of Korean fried rice cooked with kimchi (obviously!) To make this recipe vegan, you’ll need vegan kimchi (sometimes labeled “fish-free kimchi) and plant protein of choice (I used extra firm tofu).
Recipe for Vegan Kimchi Fried Rice
This vegan fried rice is a one-pan recipe that is super easy to whip up and will take you around 5 minutes. The result of this minimal effort recipe will be a slightly spicy and deliciously savoury dish with multiple textures and flavours.
One of the easiest Korean meals you could make (when you have the right ingredients) is Kimchi Fried Rice! All you truly need is some rice, some vegan kimchi (the more fermented and sour, the better!) plus a few simple ingredients most of us have at home. You can make my vegan kimchi recipe from scratch here!
This is one of my favourite ways to eat leftover rice; in fact, this tastes better with day old rice than freshly cooked rice, in my opinion. This recipe is perfect for one person so if you are cooking for yourself but not a fan of leftovers, you can simply make this for one meal! Feel free to double or triple the recipe to enjoy with someone else or to save some to microwave later.
Ingredients for Kimchi Fried Rice (Vegan)
- Vegan kimchi
- Cooked rice
- Extra firm tofu
- Onion
- Soy sauce
- Frozen mixed vegetables
- Garlic powder
- Toasted sesame oil
How To Make Vegan Kimchi Fried Rice
Start by heating oil on medium-high heat in a large non-stick pan. If you don’t have leftover cooked rice, make sure you have cooked rice first.
On one side of the pan, crumble up some extra-firm tofu. On the other side, add diced onion and vegan kimchi. Sauté separately for a couple of minutes until the tofu starts to get golden. Add soy sauce onto the tofu and mix.
Next, add in mixed vegetables, cooked rice, and garlic powder and mix everything on the pan together and cook for another couple of minutes.
Turn the heat off and mix in toasted sesame oil. Give it a taste to see if you need to add more soy sauce or kimchi. Optionally, top your vegan kimchi fried rice with sesame seeds and green onions.
