So many vegan recipes for Italian Pasta Salad are 30-45 mins to make and nobody got time for that! So I made a 12-mins vegan Italian Pasta Salad recipe! Aka a lazy or quick version that’s tasty, super simple and easy to make!

It’s great as a main or side dish, perfect for BBQ salads, and even great for meal prep (just multiple based on servings needed)!

This vegan Italian pasta salad takes 12 mins to throw together!

All you need to make this delicious and simple vegan salad is some pasta (like Fusilli), Italian dressing, Italian seasoning, dijon mustard, onion, bell peppers, cucumber, black olives and any preferred vegetables you’d like!

If you want to make this healthier, you can also add in as many vegetables as you’d like. You don’t need to follow my recipe exactly, as you are more than welcome to customize it based on whatever ingredients you have at home!


Can vegans eat Italian dressing? Yes! Most Italian dressings are vegan. Just double-check that there’s no dairy or eggs on the ingredient list of your Italian dressing


The recipe can be made gluten-free using gluten-free pasta.

Vegan Italian Pasta Salad

Ingredients for Italian Pasta Salad (Vegan)

  • Pasta
  • Italian dressing
  • Italian seasoning
  • Dijon mustard
  • Red onion 
  • Bell peppers
  • Cherry Tomatoes
  • Cucumber
  • Black Olives
  • Carrots (optional)
  • Avocado (optional)
  • Chickpeas or Tofu (optional protein)
  • Fresh parsley or basil (optional)

How To Make Italian Pasta Salad

Start making your pasta by taking a large pot, bringing plenty of water to a boil and cooking your pasta according to instructions. Move to the next step but once cooked, drain pasta and rinse thoroughly in cold water until pasta is cold.

While pasta is cooking, prepare the diced vegetables for your vegan Italian pasta salad and add them to a bowl. I diced 1/2 red onion, 1 bell pepper, 3/4 cup carrots, 15 cherry tomatoes, 1 cup cucumber, 1/4 cup black olives, 1/2 avocado, and 2 tbsp fresh parsley chopped finely (you can also use fresh basil). I also added a can of rinsed chickpeas for protein! You could also add sliced tofu if you wanted as well!

Drain your pasta and rinse thoroughly in cold water until the pasta is cold. Add to bowl once cool.

Next, add your Italian dressing ingredients into the bowl: 3 tbsp Italian dressing, 1 tbsp Italian seasoning and 2 tbsp dijon mustard. Mix well and voila! Easy vegan Italian pasta salad!

Add salt and pepper to taste and adjust ingredients according to taste preference. Enjoy this right away or keep it in a tightly sealed container in the fridge for up to 4 days. This recipe is great for weekly meal prep too!
