How To Make Vegan Feta with Tofu
Start by preparing the tofu by pressing the tofu! Either use a tofu press or wrap the tofu around with paper towels and place on a shallow plate. Place something heavy on top such as a cast iron skillet and add more cans and jars to weigh it down further. Leave for a minimum of 10 minutes while preparing the marinade ingredients.
While your tofu is pressing liquid out, it’s time to make your feta marinade. In a large container, add the remaining ingredients and mix well.
Once the tofu is pressed, discard the paper towel and cut the tofu into small cubes.
Add the cut up tofu pieces into the large container and mix well with the marinade. Allow to marinate for at least 1 hour, preferably overnight, before serving.
Keep in a tightly sealed container in the fridge for up to 4-5 days and enjoy as a delicious alternative to feta cheese.
