These vegan fajita bowls are a super quick 15 mins recipe and make 4 fajita bowls which is perfect for lunch, dinner and even meal prep!
You can also cut measurements in half if you only want to make 2 or even 1 large fajita bowl!
Vegan fajita bowls are tasty, filling, and high in protein! They’re similar to burrito bowls but using ingredients that are more often used in fajitas!
Recipe for Vegan Fajita Bowls
This vegan fajita bowl recipe is easy yet super delicious! The combination of black beans and rice will keep you full for hours & the flavours of fajitas will have you making this over and over again.
All you need is some cooked rice, beans, fajita seasoning and a few other ingredients you would have in fajitas! Feel free to add in other vegetables and switch up the sauces to fit your preference!
If you don’t have a sauce at home for your fajita bowls, I highly recommend the vegan cilanto yogurt dressing I included in this recipe, but it’s totally optional! I just wanted to include a dressing you can make with your fajita bowls 🙂
You can also garnish your fajita bowls with lime wedges, salsa, vegan sour cream, avocado, and/or guacamole!
Meal prep tip: This is an awesome recipe that is great to meal prep in advance! Make all these ingredients separately in the beginning or end of your week and have multiple meals that you can simply heat up and enjoy.

- Vegan yogurt (plain)
- Fresh Cilantro

This recipe is gluten-free, dairy-free, nut-free and soy-free (depending on vegan yogurt or sauce you use).
How To Make Fajita Bowls (Vegan)
1. Heat 1 tsp of oil on a large pan on medium-high heat and cook onions and bell peppers for around 2-3 minutes.
2. Add garlic and saute for another couple of minutes.
3. Add 1 tbsp of fajita seasoning with a small splash of water and mix until well-combined. Set aside.
4. In the same pan, add another 1 tsp of oil and cook mushrooms for a few minutes until they become golden. Add 1 tbsp of fajita seasoning with a small splash of water and mix until well-combined. Set aside.
5. In the same pan, add black beans along with remaining (2 tbsp) of fajita seasoning and a splash of water. Mix and cook until beans are well coated in the seasoning.
6. In a blender, add all cilantro yogurt dressing ingredients and blend until smooth.
7. Assemble your fajita bowl by adding in 3/4 cup of rice, 1/2 cup black beans, 1/4 of the bell pepper and onion mixture, and 1/4 of the mushrooms into one serving bowl.
8. Top with 1/4 of the cilantro yogurt dressing and serve with lime wedges, salsa, vegan sour cream and/or avocado slices. Enjoy!
Eat alone or serve with a side of salsa, guacamole and/or vegan sour cream.
