This vegan noodle fried rice cup recipe is flavourful, savoury and combines the comforting taste of fried rice with noodles in a cup. All you need is instant cup noodles (that’s vegan friendly) and 5 ingredients to make fried rice!

This vegan cup noodle fried rice is a one-pan recipe that is super easy to whip up and will take you around 5 minutes to make using leftover rice. If you don’t have leftover rice, make whatever short-grain rice you want for fried rice first so the rest is only 5 mins to make.

You’ll want to use cup noodles vs instant noodle package because you’ll end up putting your fried rice into the cup and flip it onto a plate and lift the cup so a circular cup shape of noodles fried rice is aesthetically on your plate for serving allowing you to top it with whatever toppings you want (green onions, sesame seeds, etc).

To make the dish vegan friendly, we are using tofu instead of eggs for the fried rice, as well as cup noodles that are vegan friendly. This is a super budget-friendly recipe as you just need cup noodles, rice, oil, tofu and one of my most used asian ingredients: Roasted sesame oil!

  • Cooked Rice
  • Instant cup noodles (vegan-friendly)
  • Oil
  • Tofu (extra-firm)
  • Roasted Sesame Oil
  • Toppings: Sesame Seeds, Green onion, etc

How To Make Vegan Cup Noodle Fried Rice

1. Start by cooking your rice according to package instructions if you don’t have leftover rice to use.

2. Next, heat up a frying pan or wok with around 1 tbsp of oil over medium-high heat, and crumble tofu with your fingers into the pan. Cook until the tofu is golden. Optionally, you can add a splash of soy sauce to the tofu for extra flavour.

3. While the tofu is cooking, boil water for the cup noodles. Then you want to crush the noodles next, so open the cup, remove the seasoning packet and put the noodles in a ziploc bag (which was the easiest), and use back of spoon (or hands) to crush the noodles.

4. Put the crushed noodles back into the cup and empty the seasoning packet in the cup as well. Pour enough boiling water to cover the noodles (instead of the line indicated in noodle cups). Leave for the noodles to soften.

5. Next, add the cooked rice to the pan with the golden tofu. Mix well and cook for a minute or two until everything is well combined and heated through creating fried rice (feel free to add other things to your fried rice including garlic, veggies, etc if you prefer to add more veggies).

6. Once the cup noodles have cooked for a couple of minutes in boiling water, add everything in the cup to the pan with the rice and tofu mixture. Stir everything together until well combined. Serve as is, or drizzle some roasted sesame oil at the bottom of the empty noodle cup and sprinkle some sesame seeds if desired (which will be on top of the fried rice when you flip on plate). Scoop the noodle and fried rice mixture back into the noodle cup, packing it firmly. Flip the cup onto a plate to serve. Optionally, top with chopped green onions for an extra burst of flavour on top of your vegan cup noodle fried rice!
