It’s been so long since I’ve done one of these videos, I felt I owed you one! I’m always looking for new ways to make meals easier and quicker. This video features a delicious BBQ beans on toast, a couscous burrito and a spicy Korean stir fry recipe.

 

BBQ Beans On Toast

Ingredients (no measurements, just use however much…): 

  • chopped onions
  • chopped portobello mushrooms
  • black beans or pinto beans or whatever beans of your choice
  • barbecue sauce
  • baby spinach
  • toast
  • chopped green onions (optional)
  • sliced avocado (optional)

Vegan Couscous Burrito

Ingredients: 

  • prepared couscous:
    • 1 cup dry couscous
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp cumin
    • 1 tsp vegetable broth powder
    • 1 cup boiling water
  • tortilla wrap
  • refried beans
  • corn
  • avocado or guacamole
  • greens of choice
  • salsa

Vegan Spicy Korean Stir Fry

Ingredients:

  • chopped vegetables of choices (I used garlic, onion, broccoli, mushrooms, cabbage)
  • plant-based protein (I used vegan hot dogs)
  • sauce:
    • Korean red pepper paste
    • Soy sauce
    • Agave nectar, maple syrup or any other sweetener

  1. Stir-fries and beans on toast are fantastic! I LOVE making stir-fries with tofu or tempeh with eggplant, onions, peppers, broccoli, carrots, and cauliflower! Oh yeah, and toast toppers–avocado, nutritional yeast, or PB&J!
