Now, it’s time for the recipes that I tried! 🙂
Recipe #1: Peanut Butter Waffles by Tess Begg
I love the waffles so much and it was like having dessert for breakfast! I just changed up a few things in this recipe and used whatever was available in my kitchen at the moment. Instead of buckwheat flour, I used white flour. For the carob sauce, I used cocoa powder instead of carob powder (I tweaked the recipe a little bit- Watch the video to see what I mean).
And because I love blueberries with waffles, I garnished it with blueberries on top and drizzled the carob sauce on top! Yum!
Recipe #2: Adobo by Jessica Uy (The Foodie Takes Flight)
A lot of you guys like Asian food (as do I!), so I knew I had to try the classic Filipino favourite — adobo! Now, I learned that there are different ways to make adobo, and I realized that it’s more of a way of cooking rather than a set recipe (according to The Foodie Takes Flight’s eBook). The recipe traditionally uses meat but of course, tofu was used as a replacement to make it vegan-friendly.
To be honest, I haven’t tried adobo before, so I don’t know what it’s supposed to taste like. It kind of reminds me of braised potatoes — a common recipe that Korean people make (which is also available in my Everyday Asian Recipes eBook). It’s a similar concept where you let the sauce simmer down until the ingredients soak up all the flavour. However, adobo has this really unique flavour and I feel like it would really go well with rice. I definitely will make this again.
Recipe #3: Avocado Pesto Pasta by Coconut Bowls
For the pesto, I used fresh kale because that’s what I had. You can also use basil, spinach, and other greens you have (but I’m going to use basil next time because it makes much more sense since this is a pesto dish haha!)
The original recipe called for some vegan butter into the mixture, but I feel like this wasn’t needed because the recipe already called for avocado and some oil. But do feel free to use vegan butter if you’d like.
I used a chickpea-based pasta because it’s higher in protein, but you can use whatever pasta you like. Also, I added a little bit of salt and pepper and some chopped pistachios on top for garnish.
Recipe #4: Sweet Potato & Quinoa Burger by Maria Koutsogiannis (Food by Maria)
The Sweet Potato & Quinoa burger recipe really stood out to me when I was flipping through her eBook.
I loved the ingredients used in creating these burger patties – sweet potato & quinoa… so simple, healthy yet the combination in a burger makes them absolutely delicious! There was nothing fancy going on, just some simple ingredients but sweet potato already has such a great taste that you don’t need to do too much.
I fancied up my burger with some vegan mayo, dijon mustard, cilantro and avocado. I think I put a little too much Dijon mustard here because the taste was overpowering, but the burger itself was really good and tasted really clean. I also love the fact that the patty stayed together so well. If you would like a healthy and delicious vegan burger, this is the recipe to go for. Check out my video to see me tasting!
