This delicious creamy soy milk pasta recipe takes about 25 minutes to cook in one pot using pasta, soy milk, vegetable broth (or bouillon cube), garlic and nutritional yeast (to make it more creamy tasting)! It’s a quick, tasty and tasty pasta!

This dairy-free pasta is a one-pot meal with budget-friendly ingredients and super simple to make! Feel free to customize your pasta based on what you have at home.

Not only does this pasta dish only require one pot (making it super easy to cook and clean), but also allows the starch in the pasta to cook with the soy milk! No need to strain pasta or anything as the pasta cooks in the soy milk! This soy milk pasta is creamy, savoury, and super easy to make!

This one-pot pasta recipe requires very little effort and is great for a couples dinner or solo dinner with leftovers (double portions for family dinner).

Ingredients

  • Pasta
  • Soy milk
  • Oil (or dairy-free butter)
  • Garlic
  • Vegetable Broth (or bouillon cube)
  • Nutritional Yeast
  • Garlic Powder

This Soy Milk Pasta is dairy-free, vegan, and can be gluten-free using gluten-free pasta.


How To Make Soy Milk Pasta

Begin making your one pot soy milk pasta by heating oil or dairy-free butter in a large non-stick deep skillet / pot over medium-high heat. Add minced garlic to cook for 1-2 minutes; allowing the garlic to slightly brown but not burn.

Then, stir in the soy milk (unsweetened is preferred), vegetable broth (or vegetable bouillion) and nutritional yeast. Add the dry pasta and submerge it under the liquid. If the pasta doesn’t fit completely yet, cook for a couple of minutes to allow the pasta to soften before gently pushing the rest into the skillet.

Next, bring the pot to a boil. Once it starts to boil, reduce the heat low to simmer, stirring every few minutes to separate any pasta that sticks together.

Simmer for about 20 minutes or until the pasta has cooked and the soy milk pasta sauce has thickened to your liking. If you find that there isn’t enough liquid before the pasta is cooked, add small splashes of soy milk, vegetable broth or water as needed. Add salt and pepper to taste and enjoy your soy milk pasta!
