  • Ground Oats
  • Salsa
  • Taco Seasoning
  • Oil
  • Tortillas
  • Toppings of choice: onions, cilantro, parsley, shredded lettuce, avocado slices

These smashed black bean tacos are vegan, nut-free and dairy-free.


How To Make Smashed Tacos with Black Beans

Into a food processor, add rolled oats, black beans, salsa (or tomato based sauce), and taco seasoning (optional), then blend the ingredients until smooth. This mixture will form the base of your taco filling.

Take a soft tortilla and spread a thin layer of the bean mixture over it, ensuring the mixture is evenly distributed.

Heat some vegan butter or oil in a non-stick pan over medium heat, then place the tortilla, bean side down, in the pan. If you want to cook the diced onions, add them to the pan now and cook for a few minutes until bean mixture is cooked to your liking (the mixture should become slightly browned and crispy).

Carefully flip the tortilla over, add the cooked onions, more salsa (around 2 tbsp per taco), small amount of chopped cilantro, and a sprinkle of shredded vegan cheese (if using). You can also add guacamole or avocado slices (or instead of the vegan cheese).

Once the vegan cheese has melted, remove the taco from the pan, serve immediately, and enjoy this simple yet addictive meal.

    I’ve just made this and it’s excellent. It comes together really quickly (even with making salsa instead of using store bought) and tastes great. I laid a slice of cheese on my tortilla before I spread my bean mixture on it (so bean mixture over the cheese) and it melted perfectly and didn’t leak onto the pan. I’m going to whip up a simple guacamole tomorrow because I think these will be next level delicious with cheese and guac. Thanks so much for such a lovely recipe, it really hit the spot.

    I just finished making and eating these. I sauteed onions, added the taco seasoning and salsa. Then I added that to the food processor with the other ingredients. So good and low effort. Yum!
