Ingredients

  • Sushi Rice
  • Rice Paper
  • Rice Vinegar
  • Sugar
  • Nori Sheets
  • Vegetables: Avocado, Carrot

  • Bouillon seasoning
  • Kelp powder (optional)
  • Beetroot powder (optional)

How To Make Rice Paper Sushi Rolls

1. Let’s start by cooking the rice according to instructions. Make sure to use sushi rice or short-grain white rice.

2. Make the flaky tofu “fish” by grating (or crumbling) the extra-firm tofu using a food grater.

3. In a bowl, mix together the rice vinegar, miso paste, garlic powder, salt, Better Than Bouillon, beetroot powder (optional for a pinkish salmon colour), and kelp powder (optional for the fishy taste). Pour over the flaky tofu and then add vegan mayo. Mix until well combined.

4. Once the rice has cooked and cool down slightly, add it to a mixing bowl and mix in rice vinegar, salt and sugar.

5. Prepare the rest of the ingredients such as avocado (thinly slice) and carrots (julienned or grated).

6. Cut each nori sheet into 6 different rectangular pieces.

7. To assemble the rice paper sushi, start by dipping a 10-inch rice paper in warm water to soften. Place a piece of nori on the softened rice paper, spread a layer of sushi rice over the nori, add a portion of the vegan “fish”, avocado slices, and carrots. If desired, add a drizzle of vegan mayo and/or sriracha. Top with another piece of nori then fold the rice paper and seal the dumpling.

8. Spread sesame seeds onto a plate (optional) to lightly coat each side of the rice paper sushi with some sesame seeds. Repeat #7 and #8 to make the rest of the rice paper sushi.

9. Heat oil in a pan and fry on both sides for about 2-3 minutes each or until slightly golden and crispy.

10. Serve with soy sauce for dipping and enjoy!
