
This delicious protein mango chia pudding recipe takes about 5 minutes to make using protein powder, mango and chia pudding ingredients such as chia seeds, coconut milk, soy milk (highest in protein but you can choose alternative you prefer), sweeteners like maple syrup and other optional ingredients for a high protein pudding that’s gluten-free and vegan.
This creamy, protein-packed chia seeds pudding is topped with mango pieces, whether fresh or frozen chunks!

Recipe for Protein Mango Chia Pudding
Have you ever had “Sticky Mango Rice”? This tastes just like it, but as a protein mango pudding! It’s a quick and tasty protein pudding that you can have for dessert, breakfast or a snack!
This pudding recipe is great for meal prep or a meal plan as it makes a delicious protein dish that makes 4 servings and can be prepared in advance and stored in the refrigerator for up to 4 days as a ready-to-go breakfast or dessert!
Mango and coconut are one of my top food combinations! The mixture of canned coconut milk, along with a high-protein soy milk, with chia seeds creates a creamy pudding that works perfectly with protein powder to make it thick, healthy and protein-packed!

Ingredients
- Protein Powder
- Mango
- Chia Seeds
- Coconut Milk (canned is best)
- Soy Milk (or alternative of choice)
- Maple Syrup (or sweetener of choice)
- Soy Yogurt (or coconut yogurt)
If you don’t have coconut milk, use another non-dairy milk (like soy or oat milk)
If you don’t have protein powder (or don’t want), omit and use 1/2 cup less soy milk or customize to your preferred pudding thickness.
This Protein Mango Chia Pudding is vegan, gluten-free, nut-free and dairy-free.

How To Make Protein Mango Chia Pudding
To begin making your protein mango chia pudding, make sure you have a fresh mango or have begun thawing your frozen mango pieces to top your pudding at the end.
Add 1 cup of canned coconut milk to a bowl. If you don’t have or want canned coconut milk, use 1 cup of soy milk or oat milk instead. Then add 1 cup of soy milk to your bowl.
Next, add 2 scoops of protein powder, 8 tbsp of chia seeds, and 2 tbsp of preferred sweetener like maple syrup, agave nectar or sugar-free vanilla syrup. Optionally, you can also add 1 tsp vanilla extract and/or 2 tbsp shredded coconut (mango and coconut flavor go so well together).
Mix all ingredients together thoroughly until well combined, using a whisk or fork.
Portion the mixture into separate serving containers (approx 4 as it’s a 4-serving recipe).
Top your protein chia pudding with 1/4 cup plain soy yogurt (or coconut yogurt) per serving and your mango chunks (fresh or frozen), around 1/2 cup each.
Store your protein mango chia puddings in one or many tightly sealed containers and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
When your chia pudding has expanded, it’s ready to eat! Mix well with a spoon and enjoy!
