Pulled Chicken Tacos Vegan

TikTok Chicken Tacos (Vegan)

This is a vegan version of a TikTok viral recipe that I saw recently. The original recipe is using chicken but today I want to show you how easy it is to make Vegan pulled chicken tacos completely plant-based, using tofu instead.

Tofu is a great substitute for this dish as it’s high in protein and it is incredibly versatile. And by using the simple method of grating the tofu using a cheese grater, we can create those “shreds” that will mimic the “pulled chicken” texture.


Ingredients

  • 1 block extra firm tofu
  • 1 bell pepper, sliced thinly
  • 1/2 red onion, sliced thinly
  • 1 tbsp oil
  • Spices:
    • 2 tbsp Cajun seasoning
    • 2 tsp ground paprika
    • 1 tsp red pepper flakes
    • 1 tsp Italian seasoning
    • 1/2 tsp salt
  • 1 cup canned diced or chopped tomatoes
  • 10-12 soft tortillas
  • Oil or vegan butter (around 1 tsp to toast 2 tacos) – optional
  • Shredded vegan cheese (optional- around 2 tbsp per taco) or avocado
  • Chopped cilantro (optional)

How To Make Pulled Chicken Tacos (Vegan)

  1. Grate tofu into shreds using a cheese grater.
  2. Add 1 tbsp oil on a pan, and cook tofu until slightly golden or until most of the liquid has evaporated.
  3. Add seasonings and mix well. Set aside onto a plate.
  4. In the same pan, add bell pepper and onion and sauté for a couple of minutes until slightly softened.
  5. Add the tofu back into the pan along with chopped tomatoes and sauté for a few minutes, letting the tomatoes soak into the tofu. Set side onto a plate.
  6. Add a little oil or vegan butter onto the same pan (optional) and add a soft tortilla. Top with a little vegan cheese (if desired) on one side and top with desired amount of tofu filling (if using avocado, mash in avocado on the entire tortilla).
  7. Top with some chopped cilantro and more vegan cheese (optional) and close up the taco. Cook on both sides until golden (or desired).
  8. Enjoy alone or with vegan sour cream and/or salsa.

Salmon Bowl Vegan Recipe

TikTok Salmon Bowl (Vegan)

This is a vegan version of the TikTok viral Salmon Rice Bowl, made popular by Emily Mariko. Instead of using real salmon, we will be using tofu as a replacement. By using a few different simple ingredients, we can create a Vegan Flakey Salmon, which we can then use to make our plant-based version of a Salmon Rice Bowl.

Once we’ve made our Vegan Flakey Salmon, we can simply put together our bowl by mixing some soy sauce with rice and adding our simple toppings. This is one of the best dishes to make if you miss the taste of fish.


Ingredients

Vegan Flakey Salmon Recipe (around 2 servings):

  • 1/2 block extra firm tofu (around 200g), grated
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp regular or white miso paste
  • 1/2 tsp beetroot powder (optional – for colour)
  • 1/2 tsp kelp powder (optional but recommended for fishy taste)
  • 1 tsp garlic powder
  • 1 tsp better than bouillon or around 1/2 cube vegetable bouillon cube, crumbled
  • 1/2 tsp salt
  • 1/4 tsp turmeric
  • 1 nori sheet, crumbled
  • 2 tbsp water
  • 1 tbsp oil

Vegan Salmon Bowl (for 1 bowl):

  • 1 cup cooked rice
  • 1/2 tbsp soy sauce
  • 1 serving Vegan Flakey Salmon
  • 1/4 avocado, sliced thinly (optional)
  • Optional toppings – vegan mayo, sriracha, sesame seeds

How To Make Salmon Bowl (Vegan)

  1. Create your flakey vegan salmon by grating tofu using a cheese grater and transfer onto a mixing bowl.
  2. In a small bowl, mix together rice vinegar and miso paste until smooth.
  3. Add in beetroot powder, kelp powder, garlic powder, better than bouillon, salt and turmeric. Mix well until smooth.
  4. Add in water to thin out the mixture and crumble in nori sheet with your fingers. Mix well and pour the paste into the grated tofu. Mix well to evenly coat.
  5. Heat oil on medium-high heat on a non-stick pan and add the tofu. Cook for 3-5 minutes, stirring frequently until cooked to your desire.
  6. Enjoy right away or store in a tightly sealed container in the fridge for up to 4-5 days.
  7. Create your vegan salmon bowl by cooking rice and preparing your Vegan Flakey Salmon.
  8. For each serving, place 1 cup of cooked rice into a bowl or plate.
  9. Add soy sauce and mix well.
  10. Top with one serving of Vegan Flakey Salmon and avocado slices.
  11. Drizzle on vegan mayo and sriracha and top everything with sesame seeds.
  12. Enjoy right away with a side of Vegan Kimchi and/or some roasted seaweed.

Tunacado Sandwich Vegan

TikTok Tunacado Sandwich (Vegan)

This is a vegan version of the TikTok viral “Tunacado” sandwich. The original Tunacado is a popular sandwich at the Joe & The Juice chain establishments, which consists of a scoop of “tuna mousse” layered with pesto, tomato and avocado, sandwiched between two pieces of flatbread. To make this dish vegan, it’s as simple as creating a vegan version of pesto (which tastes just as good as regular pesto) and a vegan version of “tuna” salad.

To make the Tunacado sandwich vegan, all we need is a Vegan Tuna Salad, which can be easily made with chickpeas, and a Vegan Pesto, which only takes a few ingredients. I’m using a sunflower seed pesto, which is nut free, making this whole recipe nut free.

Once we have those ingredients, it’s as simple as just putting everything together. The original Tunacado consists of a “tuna mousse” so you can feel free to blend the chickpea tuna salad into a mousse consistency; however, I like to keep some chunks in.


Ingredients

Vegan Tuna Salad (around 4-6 servings):

  • 1 stalk celery
  • 1/4 red onion
  • 1 can chickpeas, drained & rinsed
  • 1/4 tsp kelp powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp dijon mustard
  • 2 tbsp vegan mayo

Vegan Pesto (around 8-10 servings):

  • Around 60g basil (around 2 cups)
  • 3 cloves garlic
  • 1/3 cup sunflower seeds or pine nuts
  • 1/2 tsp salt + more to taste
  • 2 tbsp nutritional yeast (optional)
  • 1/2 cup olive oil

Vegan Tunacado Sandwich (per 1 sandwich):

  • 2 pieces of sandwich-sized flatbreads OR 2 slices of bread of choice
  • 2-3 tbsp Vegan Pesto
  • around 1/3 – 1/2 cup of Vegan Chickpea Tuna Salad
  • 3-4 slices of tomato
  • 1/4 avocado, sliced thinly
  • salt & pepper to taste

How To Make Tunacado (Vegan)

  1. Create your vegan tuna salad: In a food processor, add celery and red onion and pulse a few times to chop finely and set aside in a large mixing bowl (do not rinse the food processor).
  2. Add the chickpeas and nori sheet into the food processor and pulse a few times to mash, leaving some chunks.
  3. Add the remaining ingredients and mix well. Taste and adjust seasonings as needed.
  4. Next, make your vegan pesto: Into the food processor, add basil, garlic, sunflower seeds (or pine nuts), salt and nutritional yeast.
  5. Begin the food processor and slowly pour in the olive oil while blending until mixed well into a sauce. You may want to add more or less olive oil depending on your preferred consistency.
  6. Give it a taste and add more salt as needed.
  7. Enjoy right away or keep in a tightly sealed container in the fridge for up to 6-7 days.
  8. Make your vegan tunacado sandwich: Onto two pieces of flatbread (toasted if desired), spread Vegan Pesto.
  9. Top one slice with Vegan Tuna Salad then top with tomato slices.
  10. Top the other slice with avocado slices.
  11. Sprinkle on salt and pepper on both sides, as desired.
  12. Close up the sandwich and enjoy right away.

    I am in awe. I tried the salmon bowl and I could not believe it was vegan. It tasted just like salmon and especially with rice and avocado, topped with vegan mayo (didn’t add sriracha this time), it was incredible. I highly recommend making sure to add both kelp powder and nori because it really adds a lot. I can’t wait to make this again, I’m salivating just thinking about it!
