In today’s world, most of us adults are often very busy and constantly on the go. I often find myself rushing around and trying to find time to get everything done. All of our work requirements, social expectations, house chores, etc… and on top of that, somehow, we are supposed to find time to prepare meals and eat!
This is probably why so many of us choose to eat out quite often nowadays – I mean, who can blame someone for that when people are always so busy?
Eating out can be quite convenient, but it can be super expensive if you do it frequently and often, it’s not as healthy as it would be if you made the food yourself. It can also be quite tricky if you follow a vegan diet and you have to always find vegan options (Which may not be that great, depending on where in the world you are…)
Thankfully because I work from home usually and I also have a vegan cafe, I don’t have to pack food as often as I used to when I worked at an office. On this day, however, I decided to try out something different and go to a co-working space for a day to work. Before I headed out the door, I prepared enough food for lunch and dinner. So in this video, I’m going to show you guys an example of a day of eating as a VEGAN that is ON THE GO.

I made this delicious OLIVE TOFU CHEESE SPREAD RECIPE! With just a TWEAK of my tofu cheese spread AKA tofu ricotta recipe that I make often for lasagne, we’ve created another delicious and easy spread made of tofu and just a few other ingredients!
I spread this onto my sandwich and it was delicious! If you like olives, of course…
Olive Tofu Cheese Spread (Vegan) Recipe
Ingredients:
- 1/2 block firm tofu
- 1/2 tbsp dry basil OR small handful of fresh basil leaves
- 2 tbsp nutritional yeast
- 1/2 tbsp garlic powder
- 1 tbsp lemon juice
- 1/4 tsp salt
- around 20 pitted black olives (as much or as little as you desire)
Instructions:
- Add everything into a food processor or blender and blend on high until everything becomes nice and smooth, almost like a cream cheese spread.
- Spread onto toast, a sandwich, wrap or just eat it on it’s own!
- Store in a tightly sealed container for a few days in the fridge.
