My Super Lazy Day of Eating (What I Ate in a Day)

For today’s video, I shared just what a typical lazy day of eating looks like for me! Check out the video below and scroll down for descriptions of each meal.

So for today’s video, I decided to keep it short and simple and share with you what a typical lazy day of eating looks like. There are no “recipes” for today, just some meal ideas (I’ll make it up to you, I promise!), but I thought it would be awesome to put together a short blogpost where I compiled photos and brief descriptions of each meal.

BREAKFAST

For my quick breakfast, I decided to stir fry some baby spinach and squeeze a little bit of lemon juice on it. According to an article by Healthline.com, the Vitamin C from the lemon helps enhance the absorption of iron from the spinach, so that’s an extra health boost for you. 

Next, I decided to cook some baked beans (I used the Heinz Beans Original in Tomato Sauce). I literally just heated it up in the same pan as the spinach because yes, it’s a lazy day of eating, guys.

Lastly, I toasted a slice of avocado bread, cut it up in half, and mashed some avocado on top. As a finishing touch to this simple, delicious, and satisfying breakfast plate, I topped my beans with avocado slices and sprinkled on some salt, pepper, and simulated bacon bits (if you haven’t heard of this yet, I used this in a previous video and are 100% vegan guys, so don’t worry~).

LUNCH

For lunch, I decided to cook up some Soy Curls (yes, by now you already know I am obsessed with these!). I stir fried these in garlic salt and barbecue sauce (if you want to make this, you can use as much barbecue sauce as you like) for flavouring. 

I had my Barbecue Soy Curls with leftover french fries and half a burger from my Harvey’s mukbang video. I also had some baby carrots, ketchup, and iced tea! YUM!

DINNER

For dinner, I decided to have some spaghetti with a side of salad! For the sauce, I used my homemade marinara sauce and I also chopped up some of my Vegan Spam to mix in with the pasta. For my salad, I just had some random greens, balsamic dressing and topped everything with Cashew Parmesan. Pasta is definitely a go-to lazy meal for me because it’s super quick and so versatile. You can basically do anything you want! Well, maybe Italians might have a different viewpoint…
