I always get asked what are some of my go to cheap & lazy vegan meals! So since it is almost New Years and Veganuary is happening soon (a campaign to encourage people to go vegan for January), I thought it would be a great time to showcase some stupidly easy meals that I would make.
I’m definitely not a fan of spending too much time in the kitchen (even though that’s pretty much what I do for a living lol). Since I am busy and always have a lot to do, I definitely prefer quick meals that can fill up my stomach but also taste great.
I believe the key is in the preparation that you do beforehand. This is why I can’t stress enough the importance of meal and food prepping! You don’t even have to prep full meals in advance, but just having certain key ingredients ready to use will help you so much in creating quick and easy meals. For instance, when I make rice, I usually make it in bulk so I can freeze most of them (I like to portion them out if I can so that I can just take one portion out whenever I’m ready to eat). The same thing with beans – I cook dry beans from scratch and then I portion and freeze them. This way, I always have a good source of protein available whenever I need! Of course, you can use canned beans (I usually try to have a few cans of cooked beans in my pantry as well). But if you want to save a few extra dollars and also eat slightly healthier, cooking dry beans is the way to go.
