How To Make A Mexican Power Bowl
Prepare your Mexican power bowl by making your cooked rice or heating up leftovers. Make your rice accordingly and also start making your black bean salad.
In a bowl, add the black beans, corn, chopped tomatoes, diced onions, fresh lime juice, and cilantro. Mix well and add salt to taste. Set aside.
To make the guacamole, mash the avocado in a bowl. Add diced onions, minced garlic, cilantro, lemon or lime juice, and salt. Mix well.
In a separate bowl, mix the cooked rice with salsa.
To assemble the power bowl, start with a layer of the rice and salsa mixture. Add a generous scoop of the black bean salad and a dollop of guacamole on top.
