So many recipes for Mediterranean black bean salads take forever to make and nobody got time for that! So I made an 8-mins Mediterranean black bean salad recipe! Aka a lazy or quick version that’s tasty, super simple and easy to make!
It’s great as a main or side dish, perfect for BBQ salads, and even great for meal prep (just multiple based on servings needed)!
Recipe for Mediterranean Black Bean Salad
This Mediterranean black bean salad takes 8 mins to throw together!
All you need to make this delicious and simple salad is black beans, Mediterranean dressing, tomatoes, red onion, cucumber, tofu feta (from store or using my recipe for tofu feta) and any preferred vegetables you’d like!
You don’t need to follow my recipe exactly, as you are more than welcome to customize it based on whatever ingredients you have at home!
How To Make Mediterranean Dressing? I’ll share my recipe below using olive oil, lemon, red wine vinegar, dijon mustard, garlic powder, oregano and salt 🙂
The recipe is vegan and gluten-free!
Ingredients
- Black Beans
- Tomatoes
- Red Onion
- Cucumber
- Tofu Feta Cheese (store-bought or click for my 10-mins recipe)
- Greens (I used Arugula)
- Other Optional Vegetables: Roasted Bell Pepper, artichokes or olives
- Mediterranean dressing
- Olive OIl
- Lemon Juice
- Red Wine Vinegar
- Dijon Mustard
- Garlic Powder
- Oregano
- Salt
How To Make Black Bean Salad (Mediterranean)
Start making your Mediterranean salad by preparing your Tofu Feta (cut into cubes or make my 10-mins recipe according to instructions).
Next, in a big salad bowl, add your leafy greens (I used arugula but you can use kale or lettuce). Drain and rinse the black beans and add to the bowl. Toss in the halved grape tomatoes, and diced cucumbers. Add a vibrant kick to this salad with diced red onion. Add cubed Tofu Feta (recipe here) into the bowl.
Optionally, you could include roasted peppers, or be creative with other Mediterranean ingredients like artichokes or olives. This part is entirely optional and customizable to your liking.
To make the Mediterranean dressing, combine olive oil, fresh lemon juice, red wine vinegar, dijon mustard, garlic powder, oregano and salt in a small bowl. This combination brings a perfect balance of richness and acidity.
Mix your dressing until it’s well combined and toss over the salad. Toss the salad thoroughly, making sure that every ingredient is coated with the zesty Mediterranean dressing.
You can serve your Mediterranean Black Bean Salad as is for a light and satisfying meal or add a grain of your liking such as quinoa or couscous (or serve with a pita bread and hummus) for a more robust Mediterranean meal.
