I used non-dairy milk for the base, vanilla protein powder to make this matcha chia seed pudding higher in protein, and non-dairy yogurt and berries as toppings.

How to Make Chia Seed Pudding
Add matcha powder to a small bowl and whisk with hot water until smooth (Don’t worry if you don’t have a matcha whisk, any whisk or a spoon works!)
In a large bowl or container, combine non-dairy milk and vanilla protein powder. Whisk until smooth and well combined. Stir in the maple syrup, or sweetener of your choice, and adjust to taste. Stir in chia seeds and let the mixture sit for about 10 minutes then stir again (this part is optional but will help reduce/prevent clumping).
Transfer into small jars or single-serving containers. Top with a generous spoonful of non-dairy yogurt (for each jar) and some chopped fresh strawberries or other fruit (optional). Cover and refrigerate for at least 2 hours (or overnight) until thickened into a pudding consistency.
