Today’s video is a very chill day of me showing what I ate as I try to power through my day despite my exhaustion! If you’ve been following my stories on Instagram, you’ll know that I recently moved into a new condo — and having to move TONS of stuff (guys, I think I might be a hoarder LOL) while trying to keep up with work (YouTube and the cafe) is no joke!
I’ve recently been feeling out of touch with my online life so I decided to film a short vlog of me settling in my new home (still in Calgary), and briefly sharing what it looks like when I work at the cafe.
If you don’t know this yet, my mom and I own this little vegan cafe in downtown Calgary called SaVeg Cafe. I’ve been working a lot here lately because we’re understaffed. Nothing too special — just me filming myself eating and doing some coffee action.
So the above photos are the dishes I had for breakfast and lunch — the Breakfast Bagel and the Bulgogi Burrito. Both are in our cafe menu and would love it if you gave it a try when you can visit someday.

Moving on, since I got back home from the cafe, I was too tired to cook anything extravagant so I opted for a simple, lazy dish where I mixed up some kimchi, rice, chickpeas, and some broccoli. It was my first time cooking at my new place. The result was this delicious Lazy Kimchi Fried Rice — of which the simple “recipe” you can find below!

Lazy Kimchi Fried Rice
Ingredients:
Note: no measurements because I didn’t measure! This was simply a very quick and easy dish I made when I didn’t want to cook. Watch the video for more context, please~
- Oil for cooking
- Diced onion
- Sour vegan kimchi (recipe HERE) – I prefer to use sour or over-fermented vegan kimchi for kimchi fried rice
- Cooked rice (at least a day old)
- Green peas
- Garlic powder
- Chickpeas
- Soy sauce or coconut aminos
- Toasted sesame oil
Instructions:
- Heat oil in a pan and saute onions with vegan kimchi for a couple of minutes.
- Add in chickpeas, green peas, garlic powder, and rice. Mix well.
- Add more kimchi and kimchi juice, if needed, along with soy sauce and toasted sesame oil. Mix. Give it a taste and add more seasonings if needed.
