Ingredients
- Chickpeas (save the liquid too – it’s called aquafaba and you’ll be using it too!)
- Lemon juice
- Tahini
- Garlic
- Cumin
- Salt
This oil-free hummus is: gluten-free, vegan, soy-free, and dairy-free!
How To Make Oil-Free Hummus (Vegan)
Over a bowl, drain the liquid from the chickpeas and save the liquid into the bowl.
Into a food processor, add ¼ cup of aquafaba (the chickpea liquid from the bowl) along with the rest of the ingredients: chickpeas, lemon juice, tahini, garlic, cumin and salt. Blend until smooth. If needed, add small splashes of more aquafaba to help blend or make smooth/creamier.
If you’d like, top with paprika and/or parsley.
Keep in a tightly sealed container for up to 4-5 days in the fridge and enjoy with pita bread, tortilla chips, on toast or whichever way you’d like.
