I always say that prepping your meals is one of the best ways to eat healthy and stay on track of your goals. Plus it’s the best way to save time and money! This meal prep takes very little effort (just chopping veggies mainly) and will help you achieve your fitness goals.

Everything-You-Have Veggie Soup Recipe:
You can literally add whatever veggies and protein you’d like into this soup – this is just my way of using up a bunch of the veggies I had in my fridge and getting loads of vitamins & minerals in. A lazy tip would be to buy veggies that are pre-chopped so you can do minimal chopping and can throw most things into the pot or pressure cooker.
Ingredients I used –
- Veggies I used (everything chopped):
- 1 potato
- 1 cup kale
- 3-4 stalks celery
- 3-4 green onion
- bunch cilantro
- bunch parsley
- 3 cups cooked kidney beans
- 1 cup dry red split lentils
- 4 cups water
- 1 veggie bouillon cube
- 1 large can of chopped tomatoes (796 ml)
- 1/2 tbsp garlic powder
- 1/2 tbsp italian seasoning
Bean Spread/dip Recipe:
Once again, this is highly customizable, so you can feel free to add or remove anything you wish (well, except for the beans cause you probably need that for a bean spread lol. But you can switch up the beans and use whatever kind you wish!). This is perfect to spread into a sandwich or use as a dip!
Ingredients –
- 3 cloves garlic, minced
- 1/2 onion, diced
- 2 cups cooked kidney beans
- bunch cilantro, chopped
- 2 stalks celery, chopped
- 2-3 green onion, diced
- Juice of 1 lime (or lemon)
- Salt & pepper to taste
Hi – I appreciate your posting the Bean Spread/dip Recipe, but all I see is an ingredients list (no directions). I clicked the link to read more, but still no directions. Am I missing something?
