Due to a number of requests, I decided to do a video showing some no-heat cold vegan lunch ideas that are simple, easy and delicious! I made three different lunches that you could take with you and you do NOT have to heat them up. Perfect for anyone that’s always on the go, anyone that doesn’t have access to a microwave or anyone that just enjoys eating cold lunches 🙂

Guacaroni with black beans
Ingredients (approx 2 servings):
- 2 cups cooked macaroni
- 1 avocado
- 1/2 lemon (juiced)
- Bunch of cilantro, chopped (optional)
- 1/4 red onion, diced
- Salt & pepper to taste
- 1 cup of black beans (optional)
- Top with hot sauce AKA Sriracha (optional)
Black Bean Wrap
Ingredients for the black bean filling (approx. 2-3 servings):
- 1 cup cooked black beans
- 1/4 cup oats
- 1/2 lemon, juiced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1/4 tsp salt
- 2-3 tbsp water (to help blend)
Quinoa Salad
Ingredients (approx. 2 servings):
- 1/2 cup uncooked quinoa
- 1 cup water
- 1/2 bell pepper
- 1 cup broccoli
- 1/2 avocado
- 1/4 medium red onion, diced
- Bunch of cilantro (chopped)
- 3-4 basil leaves
- Olives (as many as you want!!)
- 1/2 lemon, juiced
- Salt & pepper to taste
