I love the versatility of this breakfast taco recipe because you can fill it with anything you want on top of the black bean filling. I love cooking the black beans with onion and red peppers and topping my breakfast tacos with diced tomatoes, salsa, cilantro, or even guacamole!

- Black beans
- Taco Seasoning or seasoning of choice
- Avocado
Optional Vegetables to add (optional): - Corn
- Onion
- Bell pepper
- Tomatoes
- Salsa
- Cilantro
- Lemon Juice
This breakfast recipe is soy-free, dairy-free, nut-free & vegan!
To make the recipe gluten-free, simply swap tortillas with gluten-free tortillas.
How To Make Black Bean Breakfast Tacos
1. Start making your black bean breakfast tacos by rinsing and draining your black beans.
2. Next, mash your avocado onto half of a laid-out tortilla. Squeeze lemon juice onto the mashed avocado (if you have lemons or lemon juice).
3. Top the mashed avocado with your black beans, vegetables (corn, onion, etc), and taco seasoning. Add whatever else you want: tomatoes, salsa, cilantro, etc. before folding in half.
4. Next, heat up some oil in a pan (feel free to skip the oil to keep it healthier) and lightly pan-fry the breakfast taco for a few minutes on each side to make it crispy. Flip with 2 spatulas if needed.
Voila! Crispy black bean breakfast tacos!
