5-Minute Vegan Pasta Recipes using Gnocchi

For today’s recipes, I decided to create 5-minute Vegan Pasta Recipes using Gnocchi! If you love gnocchi and would love to know how you can easily whip up some delicious recipes with it, then head over to the video below and simply scroll down to get the ingredients!

Gnocchi (pronunciation: NYOW-kee) is a type of Italian pasta that is traditionally made by mixing mashed potatoes, eggs, and flour (of course, to make it vegan, we just simply have to take out the eggs. A lot of store-bought gnocchi is naturally vegan but please check the ingredients list). The texture is nice and chewy, very filling, and best of all — it’s really easy and fast to cook, making it the perfect main ingredient for these 5-minute pasta recipes! 

I actually wanted to challenge myself to make these dishes in 5 minutes or less to show you how quick and easy you can prepare a meal for yourself. I’m a huge fan of not spending too much time in the kitchen so gnocchi is often an ingredient I like to use. It actually only takes about 2 minutes to boil as it’s pretty much ready to eat already from the package. 

Without further ado – here are the recipes!

Lemon & Spinach Gnocchi

Ingredients:

  • 1 serving of gnocchi
  • 1/4 onion, diced
  • ½ tbsp vegan butter
  • 1/2 tbsp minced garlic
  • 1/2 cup shelled edamame beans
  • Juice of 1/2 lemon
  • 1/3 of a can of coconut milk
  • A handful of baby spinach
  • 1 tsp lemon zest
  • 1/3 veggie bouillon cube
  • 2 tbsp nutritional yeast
  • Salt & pepper to taste
  • Optional: cashew parmesan cheese

Instructions:

  1. In a medium mixing bowl, add in the gnocchi and pour some hot water over it. Let this sit while preparing everything else.
  2. Add vegan butter onto a frying pan. Cook onions, garlic, and edamame beans for a couple of minutes.
  3. Pour in the lemon juice and coconut milk. Drain the water out of the gnocchi and add into the pan. Mix and let this come to a soft boil. 
  4. Add a handful of spinach, lemon zest, veggie cube, and nutritional yeast. Mix well and let it cook until the sauce thickens. Add salt & pepper if needed. 
  5. Top with cashew parmesan. Enjoy! 

Creamy Pumpkin Gnocchi

Ingredients:

  • 1 serving gnocchi
  • 1 tbsp vegan butter or oil
  • 1/2 tbsp garlic, minced
  • 1/2 cup pumpkin puree
  • 1/3 cup canned coconut milk
  • 1/4 cup chickpeas
  • 2 tbsp nutritional yeast
  • 1/2 tsp thyme
  • Salt & pepper to taste

Instructions:

  1. Cook gnocchi according to package instructions (or simply by pouring in hot water and letting it sit for a few minutes while preparing other ingredients).
  2. Add vegan butter on a pan on medium high heat, then add garlic and cook for 1-2 minutes. 
  3. Add pumpkin puree and coconut milk. Whisk until well-combined.
  4. Add in chickpeas, nutritional yeast, and prepared gnocchi. Mix well and season with salt, pepper, and thyme. Let it simmer until the sauce thickens. 
  5. Serve and enjoy!

Sweet Butter Gnocchi

Ingredients:

  • 1 serving gnocchi (optional: you can also prepare this with my Sweet Potato Gnocchi recipe, which would make this even more delicious!) 
  • 2-3 tbsp vegan butter
  • 2-3 tbsp brown sugar

Instructions:

  1. Cook gnocchi according to package instructions (or add boiled water to gnocchi and let it sit for a few minutes). 
  2. Heat vegan butter on a pan on medium high heat. 
  3. Add prepared gnocchi and let this cook for a few minutes in the butter until the sides become golden brown. When the gnocchi is almost done, sprinkle on the sugar on both sides. 
  4. Plate and sprinkle on some more sugar if desired. Serve warm and enjoy!
